It sounds like you have the same detrimental habit that I've had ever since starting piano music composing, that I'm only recently learning out of - which is following the grid of the DAW to a T, and making everything a bit too perfect - which makes the music sound very robotic.
This has some good ideas, but I would get a midi controller if you don't already have one, and start recording the piano. And if you don't have much experience, you can record these pieces in small parts.
However if that's not possible, the least you can do is create the illusion of a recorded piece by automating the tempo to make the flow less consistent, leaving small gaps between chords to simulate the usage of a sustain pedal, change up the velocities of the notes in a way that you would imagine how someone would play the piece.
